 Khoisan has a particular and delicious stronger flavour
solely due to trace elements and minerals, which are an
integral part of the character of Khoisan. The sea brine is
extracted from a unique Aquifer, where the sea water has
filtered through beds of shell, adding calcium, making
their special hand-harvested natural salt so pure. This
method is over 400 years old and adds a most distinctive,
memorable taste… once tasted, never forgotten.

 

 

Fleur de Sel (fine) - This is a very desirable sea salt, forming on the top of the surface of the small-specialised pans. Due to the flakes being so fine they break up into a finely textured sea salt, which is slightly moist. 

 

Fleur de Sel (flake) - A great favourite, resulting when the flakes are allowed to thicken slightly retaining the delightful flakiness. Fleur de Sel can either be crushed in a grinder or between the fingers. 

 

Coarse Sea Salt – Available from fine, coarse to chunky. This is a good basic salt for cooking and can be used in the kitchen as well as for grinders.

 

Plain Sea Salt (West Coast Style) – Available in shakers and packets. Can be used in the kitchen as well as on the table. The grain is fine enough to sprinkle directly on your food.  Use less than you normally would.

The most valuable of all, natural sea salt is also one of the most basic. Used correctly and from an impeccable source, this salt possesses the power to rejuvenate, provide renewed energy and offer a higher resistance to infections and bacterial disease. 

 

As many as 82 trace minerals and essential
macronutrients are removed in the industrial
process leaving you with simply a single compound
of harsh tastes on the palate; sodium and chloride. 

 

 

Clean natural sea salt has all the trace elements found in minute quantities in seawater. These trace elements are like links in a chain, if you miss one the whole suffer. Therefore each of these nutrients plays a role in safeguarding good health.

The Khoisan Trading Company is found on the shores of St. Helena Bay near the Berg river besides the icy Atlantic on the West Coast where the climate is perfect for the formation of salt crystals, and where you have strong unpolluted winds and months of hot dry weather allowing for high evaporation, more so than anywhere else on the South African coast. 

 

In an age old tradition, the natural sea salt from special pans are hand-harvested about every three days between November and April each year and during this time a limited amount of crystals are harvested daily as caviar salt, perfect for grinders.

Khoisan salts have a very high intensity of the minerals which promote vitality, health, regeneration, fertility and the benefits of the sun (0 to 1, which is the highest). Khoisan has a "clockwise" polarisation and are extremely compatible with our health as well as the health of your animals and ultimately plants.

How it is made…

 

As the water flows from pan to pan the salinity increases and crystallization of Gypsum (Calcium Sulphate) takes place (Khoisan’s Gardeners Gold-Dust’), from 13 Be to 25 Be.  At 25 Be the brine is pumped into special crystallisers.  Until the beginning of this century salt crystallisers were small and harvesting was done by hand.  

 

This traditional, natural method of harvesting is still done in some parts of the world, and being so labour intensive, the unrefined products are special and are marketed accordingly.

 

Salt crystals are hand-harvested, washed in sea brine and placed in baskets to drain. To dry the salt it is placed in gauze lined baskets in a drying room. It is then sifted for impurities. The salt is not subjected to intense heat nor are there harsh artificial additives used. 

Since 1996 Khoisan have produced various grades of hand-harvested sea salts, retaining all trace elements and minerals. This includes the rare variety ’fleur de sel’ (flowers of salt), which is an unique product harvested by hand on a daily basis during summer only. 

 

Fleur de Sel was originally made for the
Roman Emperors and Egyptian Pharaohs.
