The scene was set for a splendid showcase of South Africa’s young talent from three major cookery schools; South African Chefs Academy, Cape Town Hotel School Granger Bay part of the faculty of Business at the Cape Peninsula University of Technology and The Hurst Campus.

The winning menu was a brilliant pairing
  with Allée Bleue Estate Wines!

 

 

Winning Duo of Chefs; Lauren Case and Josh Wiid of the South African Chefs Academy created an excellent starter of braised pork cheek, served with light gnocchi and flavourful celeriac studded with nastergal berries. See Choice Recipes page from the teams.

 

All round the prizes were excellent; including a floating trophy and divine overnight stays with dinner at Reuben’s, and the chance to step out of the kitchen and into the spa from One&Only, Cape Town. Allée Bleue’s gorgeous Wine Estate prizes of accommodation, lunches and picnics, as well as hampers and iconic kitchenware from KitchenAid SA, South African Pork Producers’ Organisation (SAPPO) certificates and cheques, superb Scanpan knives from Al & CD Ashley, books from Struik Lifestyle and classic Lindt & Sprüngli Master Classes.

 

Accomplished Freda de Kock of the Cape Town Hotel School Granger Bay part of the faculty of Business at the Cape Peninsula University of Technology, winning the Wine Steward category with great aplomb.  

 

South African Minister of Tourism Marthinus van Schalkwyk gave an excellent and pertinent keynote address updating the audience on tourism trends; undoubtedly South Africa is on the march with excellent hotel occupancies. Charismatic Reuben Riffel presented the prizes and gave a warm and eloquent address to the students. Our guest speaker was South African born Rozanne Stevens, who is now a popular broadcaster and teacher in Ireland. Rozanne has recently brought out Relish BBQ and Al Fresco Food, the second book in ‘The Ish Factor Series’. 

 

The judging took place at the One&Only, Cape Town at Reuben’s Restaurant where the entries were of a high standard. It was apparent that much thought and skill had gone into these and judging was extremely difficult - See more… 

 

Our panel of judges bring a great deal of thoughtful analysis to their judging. Brilliant Reuben Riffel who is very encouraging and nurturing of young chefs, Marieta Human brings a well honed depth of culinary knowledge to her judgement, Wolfgang Leyrer has had decades of expertise and represented South Africa in the Culinary Olympics. Highly skilled Assistant General Manager and Executive Chef Floris Smith, a man for all seasons from Bushmans Kloof and Resort Manager of the One&Only, Cape Town Robin Thomas who has a rich background in food and beverage, and finally Michael Olivier who is equally at home with food, wine and service in the hospitality industry and brings his inimitable touch and knowledge of many years to his judging.

The South African Chefs Academy (SACA) has a passion for teaching, headed by Paul Hartmann, who represented South Africa at the Culinary Olympics and is totally dedicated to the Academy and their fundamental principals. 

 

"We have created champions," says Paul. "Chefs that have gone on to be top competition winners. What we say is give us one year and you will have the career of a lifetime with outstanding job satisfaction, recognition and excellent prospects! However it does take creativity and commitment to make it to the top and that is what we aspire to for our students."

Dynamic Alan Romburgh is taking the Cape Town Hotel School to new heights with his enthusiasm and knowledge together with his excellent team and will be overseeing the expansion of the Hotel School over time. 

 

 

Luke van Rensburg CPUT, part of the faculty of Business at the Cape Peninsula University of Technology, Marieta Human (SAPPO), South African Pork Producers Organisers who have been staunch supporters of this initiative from the beginning. Samarie Smith (Media 24) Janie van der Spuy of Fivestar PR and well-known wine writer and judge Michael Olivier, who presented the judge’s summing up and has been a pillar of support.
