Sun International The Maslow in Gauteng, home of the second of five events celebrating the launch of the Cape Legends Inter Hotel Challenge 2016

A five part series - Part Two


The rain cleared and we were fortunate to have an ideal day for our delightful Sunday alfreso lunch in a spreading Bedouin tent in the charming shaded garden of The Maslow. Lunch, a collaborative menu, was masterminded by five Chefs of Gauteng’s top hotels; Phil de Villiers (Executive Chef, 54 on Bath), Tarryn Coetzee (Sous Chef, Southern Sun Hyde Park), Executive Chef Jason Millar and Adrian Vaughan (Sous Chef, The Maslow), Jacques Etsebeth (Executive Chef Protea Hotel Balalaika) and Gerard Vingerling (Executive Head Chef The Palazzo).

Deputy Minister South African Tourism Tokozile Xasa sent a supportive message;

This competition acknowledges the talents of some of SA’s most creative and promising young chefs and wine stewards while at the same time recognising the crucial role of mentorship in the industry. Indeed, it has gained momentum and has fast become well known and well respected in the industry. We boast a strong industry and I want to assure you that we as government listen to you. Our Department will work hand in hand with you to realise our greater objective of growing this dynamic sector.


I have had the pleasure of being part of a number of previous events and am appreciative of the commitment of industry. I wish to thank you for this and continue to pledge my support. Thank you for your role in better positioning SA for economic growth, skills development, job creation, investment potential and ultimately a destination of choice. A very special thank you to Annette and her amazing team for driving this initiative. May it only grow from strength to strength."

Heinz Brunner reminded the candidates to be humble, have commitment and dedication. We need passion in trainers and learners in hotel apprenticeships and importantly, we need a back to basics approach. Simplicity and taste - the arts of cooking. Send the chemists back to their laboratories! 


This year our team of erudite judges is headed by Heinz Brunner (Honorary Lifetime President of the South African Chefs Association and past Vice-Chairman of the World Body of Chefs and currently training the SA Culinary Team for the Olympics) with Marieta Human (Nutritionist representing South African Pork) and Alan Romburgh both with many years of rich experience. On the wine side; Higgo Jacobs (South African Sommeliers Association) with Sandy Harper (CWM) and Germain Lehodey (Sommelier at Mosaic).  

 What our wine judges share is the depth of knowledge that many years in the wine industry, nationally and internationally have imparted.

We are happy to announce that StreetSmart SA will be the recipient of funds raised during the StreetSmart SA Wine & Dine Week, 4th - 10th July as each hotel will decide and use their creative energies to put together their candidate’s menu, showcased to the public in their individual style to raise much needed funds, and presented to StreetSmart SA at the Belmond Mount Nelson Hotel at the awards dinner on Friday 29th July. 

Melanie Burke, Chairman of StreetSmart SA says, “We are delighted to be a beneficiary of the Cape Legends Inter Hotel Challenge because it is an amazing development initiative. At the same time we are able to strengthen our relationship with our main partners, the restaurants whose diners raise funds for StreetSmart SA.”

Our 2016 Candidate Chef prizewinner will be traveling to the Czech Republic, The Radisson Blu Alcron in Prague. Their on-site Alcron Restaurant is a proud winner of the Michelin Star from 2012 – 2015. We are grateful to Carlson Rezidor for providing this superb prize. A week in the hot kitchen, another in the cold kitchen and a week in patisserie, including accommodation and all expenses! The silver bird will be provided by Cape Legends.

54 on Bath Team set with Jandri Niemand (Chef de Cuisine), Catherine Kenny, Ambrose Nyoni with Sommelier Ruan Nieuwoudt and Sous Chef and mentor Lutendo Funyufunyu who was one of the first candidates in Gauteng.


"This is a year for tremendous growth, both culturally and educationally for all the Wine Stewards and particularly for the winning Wine Steward. Distell and their amazing global reach has provided an international prize of note," says Lize-Marié Gradwell (Global Marketing Manager Cape Legends). 

“The opportunity to visit London, to work on the floor of a three star Michelin restaurant, and in Scotland visit the Distell whisky distilleries, fly to France and experience the fine cognac producer, Bisquit, and then on to Bordeaux.” A trip of a lifetime!

The exciting regional Cook-Offs will take place in June at the new campus at the International Hotel School in Sunninghill, Sandton and in Cape Town, at their campus in the city centre, Adderly Street. While in Durban the Cook-Off will take place at the Unilever Kitchens in La Lucia Ridge.

Hotels will be at their most creative in shades of ‘Platinum & Pearls’ vying for ‘The most glamorous table’, the table you would most ‘Wish to dine at’ and one that ‘Reflects the ethos of the hotel’. This fabulous showstopper is a showcase for SA’s finest. All will be revealed on the night of Friday 29th July at the Belmond Mount Nelson where General Manager Xavier Lablaude will be hosting the awards evening with all the participating hotels.

Candidate Chef Fabian Ling and Sous Chef Chad Bosman. The Palazzo is becoming known for its excellent bread, indeed a speciality which is served at their Medeo Restaurant

Sandy Harper, Cape Wine Master and much decorated judge represented the Cape Wine Academy at the Orientation. Sandy manages the Old Mutual PLC Executive Wine Club winning the La Motte Award for Excellence in Viticulture. In 2013 she received the ‘Ordre des Coteaux de Champagne’ and in 2014, inducted into the ‘Grand Conceil du Vin de Bordeaux’.
