With
the awakening of the South African cheese palate, milder flavours make way

best and then nurture the cheese throughout its life. Maturing the Gouda
for 6 months and the Cheddar for 12 months develops the unique character
that sets them apart from their younger, less-matured peers.

This
cheese originated in the village of Cheddar in the Somerset region in
England. Firm,
creamy textured, simple, and rustic, Simonsberg Cheddar is a memorable
cheese with a distinctive flavour; complex, nutty and lingering. One
of the most satisfying of all handcrafted cheeses.
Simonsberg,
the masters of fine cheese, continue their quest for flavour, adding a
limited release Matured Gouda and Matured Cheddar to their award-winning
collection.
Their
Matured Cheddar has all the classic qualities of handcrafted Cheddar - a
distinctive flavour profile with a strong peppery, slightly sweet, nutty,
full round note, firm to the touch and with a pleasant bite.
Gouda,
with its Dutch origins, is the epitome of a wholesome cheese and one
that is enjoyed by the whole family from breakfast through to school
sandwiches, lunches and light suppers.
Simonsberg
Matured Gouda, a semi-hard, light creamy white cheese, has a milky,
sweet, nutty-savoury taste with a pleasant note of salt and pepper
lingering in the mouth. A black wax coating protects the cheese
from drying out during its 6 months maturing process.
The
desired nuttiness results from aging, which breaks down the milk
proteins, rendering it more digestible. The younger the Gouda the
milder the flavour. After aging the cheese takes on a fuller, deeper
flavour.
While
younger Cheddar or Gouda is a staple ingredient in countless well-loved
dishes, Simonsberg matured Gouda or matured Cheddar is
the meal. Just add a little something – dried cranberries, crispy apple
and a slice of nut bread. Try Simonsberg matured Cheddar with strong dry
cider or cloudy apple
juice, a delightful accompaniment with Gouda.
